Our Story

How a small counter named after the red pine became a home for seasonal omakase.

赤松The name

Named for the
red pine

The akamatsu — Japan's red pine — is prized for its warmth and its resilience through every season. We took the name because that's the kind of place we wanted to build: warm, unhurried, and always in step with the season.

What began as a handful of counter seats has grown into a dining room that still feels like one. The chef greets most guests by name, and no two evenings are quite the same.

素材Our ingredients

Sourcing, season by season

Omakase lives or dies by its ingredients. Ours are chosen the morning they're served.

the morning market

The morning market

The chef selects fish and shellfish daily, letting the day's best catch shape the menu rather than the other way around.

rice & shari

Rice & shari

Single-origin rice, seasoned with our own blend of red and white vinegars, served at body temperature.

farm produce

Farm produce

Vegetables and citrus from growers we've worked with for years, picked at their seasonal peak.

Finishing touches

Fresh-grated wasabi, house soy, and salts chosen to bring out each ingredient — never to cover it.
